Skyr and Cookbooks

Growing up our visits to Iceland were much more frequent than they are now. The food, while simple, was comforting and after seeing family is what I most look forward to each visit back.

I've often asked my amma for various recipes and they are generally a vague list of ingredients with a lot of "until it looks right" type instructions, I've only successfully duplicated a few of them so far. So cookbooks were high on my priority list of things to acquire while in Iceland.

I did buy a handful of baking cookbooks from Hagkaup, with recipes for things I generally want to make at Christmas time. Baking is so fussy, so having the right amounts or ingredients will be nice. They have full color pictures for each recipe and several have step images as well, to help with what looks right. I also brought back with me a cookbook simply titled Matur og Drykkur (Food and Drink) by Helga Sigurðardóttir. My mother has a well-used copy, and the book I brought back is my amma's well-used copy She's going to find me a copy in Iceland and bring it for me in October, and I'll be borrowing hers in the meantime. This is sort of like the bible of traditional Icelandic cooking, more on that book to come in a later post.

A bit of a teaser, the first recipe I'll be sharing doesn't come from these books. It is something I've been wanting to be able to make for a long time, but couldn't.  Mainly, because it is not available locally, and you have to have some to make some. So I couldn't even make some from scratch, until now. I brought skyr back from Iceland, so I can make skyr. Now that I have some as long as I consistently make it every 3 weeks or so I'll have a steady supply. Skyr is a very thick nonfat yogurt, often described as a yogurt cheese.  It is a little looser than cream cheese, but thicker than greek yogurt, maybe a thick sour cream consistency.

As a small child sitting in my amma's kitchen, often still groggy and rubbing the sleep from my eyes, my breakfast was generally served to me. A bowl of skyr placed before me, lightly sweetened and just the right amount of milk mixed in to it (just until it looks right). We often sprinkled the top with just a bit of sugar and poured in milk around it. Heaven was a small mound of thick, creamy skyr swimming in a shallow pool of milk. I never ever stir it together; instead I was careful to have each bite contain the perfect ratio of skyr to milk.

Even better were the mornings that grautur was offered to replace the sugar, my favorite was strawberry. Like a pourable strawberry preserves, nothing could compare to skýr and jarðaberjagrautur (strawberry grautur). I still remember my afi reading the newspaper, my mother and amma drinking coffee and conversing in Icelandic, while us kids relished our morning skyr.

The whey is currently draining off my skyr, so I'll whip it up and take lovely pictures tonight.  It's a 2 day process to make, but most of it is unattended and the skyr makes itself automagically.  I'll share the recipe and whole process tomorrow.

Packing - Trip Planning

I am going to Iceland this summer for about a week and a half. I've made two trips in the last three years where I didn't follow my normal routine for packing and trip planning and it showed. I usually make a list of things I will need and I mark them off as I'm packing them both departing and returning, so I know I'm bringing everything home with me. Usually I'm gone for a week or more, so I tend to bring more stuff, so the list really helps.

First, I went to Minneapolis to visit with Kiy and would only be gone 2 nights, and needed a minimum of clothing/accessories. So, no list. As a result I forgot something, and had to pay to have it shipped back to me. If it was a tube of toothpaste or something along the disposable lines, no problem, but in this case it was my down pillow I got in Iceland. I couldn't just replace it at my local Target. I'm not saying write down a precise description of everything; 3 - shirts, 3 - jeans, 1 - pillow would have sufficed in this case.

The second trip was two years ago when my daughter was born, can you believe I forgot to bring the camera???? I had taken it into the nursery to take pictures since we were finishing up a few last minute things when we got the call that she was on her way. We had an hour to put things away, grab our stuff, run the dogs to my brother-in-law's and head out of town. Halfway there I flashed on an image of the camera sitting on the shelf in the nursery where I left it and almost started to cry. Hubby said "We'll just buy a new camera" which we did as soon as we got to town. The new camera wasn't as nice as the one we had, but it got us through her first three days. Forgetting the camera was COMPLETELY avoidable if I had ran through a quick list.

Now with a little one to pack for as well, lists are more important for me than ever. I can't imagine the crying and hysterics I would endure if I forgot her beloved blanket or Pooh somewhere. It's bad enough when her blanket is in the washing machine. Thankfully, I don't have to cart around near as much as when she was a baby, but trying to carefully plan for what she'll need for 8 days in Iceland is going to be difficult. I'm actually in full potty training mode just so I can hopefully eliminate a large number of diapers and wipes and all that that entails from the list. She'll be quickly thrust into a "big girl" world like real tableware and no crib. I'll try to prepare her a bit over this month.

I also picked up a Trunki for her from zulily or OpenSky for more than 50%, I can't remember which.  I'm thinking it was OpenSky though the more I think about it.  She loves riding around on it and calls it her car.  I'm hoping getting used to it and then having it packed full of special things for her trip will make everything go smoothly.  Well, as smoothly as one can hope for with a 2-year old!

Thinking of Valentine's Day

wanted to wait until February before posting about Valentine's Day. I've had this sitting in my drafts for a few weeks, but didn't want to start bringing it up too soon. I love Valentine's Day, mainly because it was 13 years ago on that day that I realized I was really falling for my hubby and that we'd potentially end up together forever. As it turned out, I was right, and the memory of the first time I had that realization has given it a bit of a special place in my heart.

I usually try to give a gift of time or an experience rather than a day to give chocolate, gifts, or other stuff. For example, a few years ago I took the day off and completely cleaned and organized his office for him. Last year I planned a scavenger hunt of sorts, I left him with a clue to a restaurant here in town and he had to come find me, from there he had other clues leading us to each of our next planned activities, eventually leading back home.



This year I'm thinking of doing a year of Valentine's. 12 valentines, 1 per month to be opened over the course of the year each with a planned day accompanying it. I feel fairly safe posting this, because, well, he doesn't read my blog. (Nicole, Jen... please keep it a secret) That's the benefit of blogging about homemaking and decorating. So anyway...

id you know the White House has a blog? I know this isn't the typical thing you will find on my blog, but I thought I should share this. I went looking for a transcipt of the inaugural address this evening when I got home and discovered that as of noon today the White House has a blog. I was pleased to see it, I think any open communication between the government and the people is a good thing. Now they just need to allow comments, although knowing spammers that might not be the best idea. Perhaps an open forum once in a while allowing two-way communication would be good.

Gift for my Nephews

This is the gift that we put together for my nephews for their birthday in early December this year. They are two years apart and we felt that both were of appropriate age for an adventure kit. We included a compass and flashlight with a notepad and pencil for each of them. A length of rope that they can use to practice their knots, and the book The Dangerous Book for Boys. They both have pocketknives already, so we didn't include those. We also included a box for them to hold all of their adventure gear. The baggies hold some homemade cherry hard tack candy bits for them to enjoy on their adventures.


I'm Back and Another Day (Year) Older...

It's after midnight, so I really should be in bed. Instead I've been up watching movies and daydreaming, is it still called daydreaming even when done at night?

Hubby plans the day tomorrow, oooops today, and I just get to relax and enjoy everything he has planned. So long as it includes me sleeping in, I'm up for anything.

I'm officially back from my bloggy break, and I will get myself caught up soon. In the meantime, while on hiatus I was tagged for a 6 Random Things About Me Meme from Kiy at Rocking Chairs and a Tricycle. Check out her Random Things too, I seriously could have blatantly stolen her list except for #2 and it would all be true about me too. The lists, not the detailed explanations. Hmmmm, let's sub crochet for counted cross-stitch and #2 works for me. Anyway, my random things:

1) I went to college for the first time exactly 16 years ago to the day. Yup, I moved into the dorm on my 18th birthday.

2) I'm a bit of a pyromaniac and love to play with fire.

3) I'm obsessed with trying to switch everything over to more natural products at home, because all the chemicals and preservatives are freaking me out! getting to me...

4) My sister had Tiffany's tape when she was younger, and I used to know all the words to her songs. Tiffany was kinda boy crazy... so was I...

5) I have a pair of green and white striped knee-high's that I wear to UND hockey games. I'm one of THOSE fans...

6) I have my ears pierced, but never wear earrings because they bother my ears. I've always been jealous of friends with earrings that go with different outfits. I still want to be one of those girls... Any suggestions? (hypo-allergenic doesn't help, and neither does wearing gold only, unless I'm just not wearing a high enough karat or something)

What do you do? For dinners, I always offer to bring a dish, appetizer, or dessert. When staying overnight, I always bring a hostess gift that reflects the likes or personality of my host and/or hostess. I also assist with minor chores, setting the table, clearing the table and dishes and if staying for a while, treat them to a dinner out as a thank you. Tidy up after myself, so as not to make things more difficult for my host and/or hostess. I think I just try to make an effort to be as gracious as possible.

My favorite gifts to bring are wine (if they drink alcohol), flowers or french-milled unscented soaps.

Question Time!

I have a question and I'd LOVE it if you would please help me with an answer.

I've been back in Grand Forks for 6, count them, 6 years... and except for 1 person (love ya Becca!), all of my friends in Grand Forks are people I'm related to through marriage or met at work. I love my friends I really do! I don't want to replace them, however, I would like to meet new people in the area. So, here's my question:

I know you don't live here, but if I lived there and was going to meet you and hit it off right away and become fabulous friends, how/where would I find you?

My reasoning is the type of people that read my blog are the same type of people that I want to hang out and create general mayhem with. Yes, I ended the sentence with a preposition... there is probably a better way to phrase it, but well, it's not coming to mind. I consider you friends already, but with the price of gas I can't start roadtripping all over creation to see a movie!

6 Quirks

I'm going to start consolidating memes and awards to Sundays, but since I forgot to do that yesterday:



1) I peel labels. Once we had just gotten back from grocery shopping and unconsciously while on the phone with my mom I peeled the labels from all the cans (about 30 of them). We had mystery veggies and mystery soup for about a month. Not even thinking about it, I had peeled each label and stacked them neatly while gabbing. Hubby was not impressed...

2) I like Wendy's fries dipped in a small Frosty. Courtesy of Andrea, my best friend from my senior year of high school. I've passed this quirk on to my hubby and his brother. I actually don't like a Frosty plain, and will never finish it after I'm done with my fries. Hubby gets to finish it.

3) I love carrots, raw. I hate carrots cooked. I love onion, cooked. I hate onion raw. This is a pattern for just about every single vegetable.

4) I categorize and alphabetize my books, movies and CD's. A friend of ours as a joke decided to move a movie out of order, by the way they were all grinning and looking at the DVD's when I came in, I knew they had moved something. I'm so used to looking at them that way that it took only seconds to see which was out of order and move it back. This is not OCD, but just makes sense with the volume so I can find things quickly.

5) I like to grow my nails out and polish them, that's the girly girl in me. But I refuse to have fake nails. So if 1 breaks they all get cut short and polish removed until they grow out again. The non-girly girl in me tends to do a lot of things that are condusive to nail breakage. Therefore, I'll have nice polished nails for a week at most, before I start the process all over again.

6) I like strawberry yogurt, but not strawberries or other strawberry flavored things. I like cherries, but nothing cherry flavored. I like oranges, but nothing orange flavored.

I guess I have a few food quirks...

A Bit About Me - Meme

I was tagged by Hana Mi to share a bit about myself.

1) What was I doing 10 years ago.

We had just moved to Ottawa, Illinois a few months earlier. We had left Grand Forks, North Dakota because our house had flooded and we were living in a FEMA trailer and it would be years before the house was finally livable again. We rented a house in the country for a while, but eventually had to find another house since the one we were living in was going on the market for more than we could afford. I loved the house in the country and was kinda sad to leave it, but we moved on again. So in May of 1998, I was working on unpacking in our new house in Illinois, working at a great law firm, and fighting with insurance to try to get our house in North Dakota fixed.

Boy am I glad all of that is in my past.

2) 5 things on my to do list for today.

Figure out a pattern for the basket liners
Start sewing above basket liners
Make labels for the baskets

Mother's Day Gift

I promised that I would share what I got my mother for Mother's Day in my Etsy Mother's Day roundup post. Sorry I put it off until now. I just love this sparrow, it's called Cheery Sparrow from Daga Design. I tucked in other goodies, but this was the primary item. I'll definitely be buying more from them in the future. I also featured the The Classic Wise Owl by Daga Design in a Friday Etsy roundup. I have a miniature version of the owl on my bookcase, I love it.

Oshie signs with St. Louis Blues

I know I usually stick to all the homey things like cooking, organizing, decorating, design type stuff, but there is much more to me than all of that. Probably the most surprising to people is my love of hockey! Well, my favorite player at UND signed with the St. Louis Blues yesterday afternoon. Before I was kinda split between the Wild (cause they are kinda local) and the Capitals (the first team I rooted for), but now I've got a new team. Seriously, watch T.J. Oshie play hockey and tell me you wouldn't change loyalties to continue watching and cheering for him.

Grace's Gift

My neice, Grace, turns 7 tomorrow, and this is what I put together for her birthday. It's a paper suitcase I picked up at Michael's and filled with pretty goodies, stickers, papers and I'll tuck in some ribbon, flowers and candy for her as well.

I hope she likes it. I try to put together things that I would have loved at her age.

Better get going if we're going to stay ahead of the weather...

Last night, hubby and I were delivering orders from a Southern Living At Home party I threw earlier this month... Of course, we choose the first real wintry day to do so. I can't complain much, we have had a very mild November. And this was our first real snowfall of the year. We've been lucky. However, a 40 degree drop in 2 days doesn't give you much of a chance to acclimate. It was 5 F when we were delivering last night, -7 F when I woke up this morning and about 2 F right now. I'm betting hubby wishes he hung the Christmas lights this weekend when it was 40F.

All day long I hear from various people I'd talk to "It's cold out there today". Which makes me want to start quoting Groundhog Day... Every time someone said it, these lines would play through my mind...

DJ 1: All right, campers, rise and shine! — and don't forget your booties 'cause it's cooooooold out there today.
DJ 2: It's cold out there everyday. What is this, Miami Beach?
DJ 1: Not hardly!


So, if I start quoting Groundhog Day, blame it on the weather...

Tuesday in the Nursery: Janie & Jack

I love Janie and Jack's clothes for children. I've been very happy with the quality and the details. My husband likes that you can buy from the same collection and not worry about whether it matches. Purely guessing, but they seem to come out with 35-45 new collections each year rotating with the seasons. At any given time you can pick your favorite of about 7-8 collections for girls or boys and 2-3 for layette. These numbers are purely estimates based on what I've seen over the last 12-18 months. Their newest layette collections are called Little Penguins and are just adorable.



Tuesday in the Nursery: Wubbanub

I know Wubbanubs have been making the rounds on the nursery/mom/baby blogs. Otherwise, I'd have never known about them. However, being that they are basically unknown up here in North Dakota, so I figured I'd mention them.

Wubbanubs are Soothie pacifiers attached to small stuffed animals to make it easier for baby to hold on to and keep the pacifier in the mouth. And, easier to find if they happen to fall out. Everyone I've given them to so far just loves them.

I can't even remember what site I first read about them on, I'm guessing it was PoshCravings, since that was the first baby one I started following. However, when I saw them I put them on my list of "Baby Stuff I Want" right away. When Baby Dagny had their big moving sale a few months back I bought a dozen. I've hoarded a few away to keep and have been giving the rest away as baby gifts.

I love the red dog, it reminds me of Clifford the Big Red Dog. And the bright color makes it easy to find among other baby stuff. Which I'm hoping it will make it easier to see once we are trying to juggle a baby and all the paraphanelia that comes with one.


Round Crib

There are so many blogs out there covering modern design and modern nursery accessories and modern this and that. To take it a step further, there are a lot that even narrow it down to mid-century modern. I have a hard time finding blogs that really concentrate on decor and design that feels very traditional or vintage even. While I like the simplicity of modern, I don't care for a lot of the fabric choices or all the straight lines. Simply not my taste, I like a little frou-frou, or fussiness as my sister-in-law calls it.

I keep hearing that there are too many breakables and that my house won't work for children. Growing up my mother had plenty of breakables, but we were taught to stay out of certain rooms and that some things were to look at, not to touch. I knew this at a very young age. When I was 2, I knew my grandmother's figurines were very precious and not to be played with like toys. I was always fascinated though, and one day my mother and grandmother puzzled at what was wrong with the figurines. What looked like a strange shadow on them was in fact jelly, since I had very carefully kissed each one after having indulged in a peanut butter and jelly sandwich. My point is that children can be taught to be respectful. Since we will have our own munchkins running around the house soon I will let you know how things go.

So, in my more traditional preferences, I'll highlight traditional children and nursery items that I absolutely love on Tuesdays.

I absolutely fell in love with the round cribs that have been in the market for a few years now. I couldn't wait to get one, since we finally have our own nursery to plan. There is quite a selection at All Things Creative, including some that are geared specifically towards each gender. These are the cribs I coveted.

Recently though a more affordable option is available for those of us looking for a round crib on a more modest budget. Last year JCPenney started offering a limited selection of round cribs, they are much more affordable and still look great. For mine, I picked a gender-neutral cherry panelled round crib from JCPenney that will be used for all of our children. I absolutely love it! I am very happy with the quality, and I also got the optional canopy intending to use it with a canopy for a girl and without for a boy.

Tomorrow Never Comes

I keep thinking that I'll get around to being a more active blogger and focusing my content and writing about something meaningful... tomorrow. First, it was "when I'm done with school", then it was "after things settle down at work" (as if that happens), then it was "when I'm done filling out all of the paperwork for adoption", now it's "when the nursery is done, baby is here and I'm on maternity leave". I can almost hear the echo of laughter from mothers reading this.

I actually would like to write a book or two or ten or whatever eventually. I've always wanted to write children's stories about a mythical fantasy world for young kids just learning to appreciate reading, a la Enid Blyton. I suppose if that is to ever happen I have to start giving myself deadlines... I'll have to do that tomorrow...
