Menu Plan Monday {24}

I am thoroughly enjoying the weather finally warming up; instead of soups, casseroles and crock pot, we're indulging in more salads, sandwiches, wraps, and lighter fare.  I've been eating a lot of cottage cheese and fresh grape tomatoes for lunch. Though it's hard to get away from some of my daughter's favorites, like Baked Macaroni & Cheese...


Do you menu plan? I got away from it for a while, I actually seemed to have more food waste when I was menu planning, because leftovers weren't getting eaten fast enough. Have you ever had this problem? When I did take care of the leftovers I had some fresh food that was intended for that evening that was sometimes wasted. I'm going to start menu planning again, but I think I'll take a slightly different approach to it. I'll be planning 3-4 meals a week without a set day assigned to them. The meals that aren't planned for will be filled in with leftovers and pantry fillers.  A fish meal, a vegetarian meal, and one or two meat meals should more than cover my small family of three.  Really, I'm cooking for two plus a little extra for a toddler, she doesn't even come close to eating a full serving of anything.



Typical pantry fillers would be beans and rice, soup and sandwiches, pasta and homemade marinara, homemade pizza with whatever leftover meat and veggies are in the fridge.

I'll be making one breakfast item each weekend to supplement a selection of cereal, yogurt and fruit.

Lunches are usually leftovers, sandwiches, soup or cottage cheese and fruits and veggies.

Breakfast Item: Apple Muffins

Planned Dinners:
Lime Garlic Chicken
Ham and Baked Macaroni and Cheese
Haddock Fillets
Black Bean Burritos

Tuesday - Pork Tenderloin with Asparagus
Wednesday - Roasted Chicken, Risotto and Salad
Thursday - Leftovers
Friday - Dinner out at The Toasted Frog
Saturday - Baked Macaroni and Cheese, Hamburgers, Homemade Baked Beans and Coleslaw
Sunday - Pantry Cleanout

Edited: I have to move fish and chips to next week, I scheduled a meal for Friday when I have had plans to go out for the last two weeks. Not sure what I was thinking. I move Friday to Saturday instead.

Christmas Day Menu

P
lanning is essential to making any day run smoothly. After breakfast we'll be traveling to visit with his grandmother for a few hours, so times are approximate. However, if we are back by 2pm everything will go off without a hitch. I picked dishes that I can prep in advance.

My sister-in-law always hosts Christmas Eve, so I just have to bring a dish. I'll be bringing a couple of Buttermilk Pecan Pies and a big plate of candies and cookies.

Breakfast (8 am)

Breakfast Potatoes
Cinnamon Rolls

Appetizers (2pm - 3pm)
Hot Spinach Artichoke Dip

I was too warm this past week to consider beef stew, so the meat went back in the freezer. Since Tuesday is supposed to be a high of 57, I figure that's the perfect night for Beef Stew and Spoon Bread. We didn't get to the Quiche either, Hubby got home quite late that night and I didn't feel like making Quiche for just me.

Hubby is out of town most of the week, and I have plans most of the week for dinner. So it's an easy week. Usually I save Sunday evenings for Pantry Cleanout and Leftovers, but based on my week I won't have much for leftovers. Since that's the first night hubby's home I'll make him something he'll love.

I'm onto South Beach Phase 2 now, but I'm going to go back to Phase 1 for this week since I'm kind of in a lull.

7 Layer Southwest Salad

Layer the following:
Lettuce and Mixed Greens
Black Beans
Sauteed Peppers and Onions
Browned Ground Beef (seasoned with taco seasoning or southwest spice mix)
Shredded Cheddar (reduced fat)
Sour Cream (low fat)
Salsa (no added sugar)

For vegetarian option, replace Ground Beef with Corn and layer above Black Beans.
